
Because I Never End Up Using All My Bananas Before They’re Gross
I have been making these muffins for years and kids love them! My husband says that with chocolate chips, they remind him of the muffins his mother used to make. I have made some modifications to the usual ingredients to make them really healthy. You can feel good about putting these in the kids’ lunches.

Recipe:
3 large bananas
¾ cup honey
1/3 cup melted coconut oil
2 eggs
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 ½ cups oat flour
½ cup oats
(optional: half a cup chocolate chips)
The fastest way to make this recipe is to use a hand blender to blend up all the wet ingredients, then throw in the dry ones, but you could totally mash the bananas first, then mix wet and dry ingredients separately, and then combine.
I use silicon mini muffins cups or mini loaf pans. Bake at 375F for 16 minutes for mini muffins.
Note: Make sure to break up the skewers before throwing them o375ut, or you will end up with a hole in the bag and garbage water all over the bottom of your garbage bin.
