
A Totally Made-Up Holiday for Eating Bacon.
My dad fried up the crispiest bacon on Saturdays, throughout my childhood. I would carefully calculate how many pieces I could have – usually two or three pieces each. But it was never enough! My mom would even offer me one of her pieces of bacon (now that’s love), but I was still unsatisfied. I felt that if I had one day a year when I could eat as much bacon as I wanted, I would be able to tolerate bacon moderation the rest of the year. So in 2010, Rich (my then boyfriend, now husband) and I came up with our own holiday, called, St. Bacon’s Day. We have been celebrating it for 11 years straight.

- St. Bacon’s Day happens on the second Saturday of November.
- St. Bacon his a humanoid character with a cartoony pig’s head and wears a long robe. He may also be holding a pig. There are as yet no known portrayals of St. Bacon.
- That’s it. Just buy a couple packs of bacon and eat it at breakfast, lunch, and dinner.
My Zero Time Method for Cooking Bacon
I love my Dad’s pan-fried bacon, but I don’t have time to stand in front of the stove like that. Here is my new way of making it.
- Lay out strips of bacon on a baking pan, on top of parchment paper. I used glass pans.

- Put pans in oven and turn set to 425 degrees F.
- Check in about half an hour and continue cooking to desired crispiness. Flip if desired, but a lot of the time you don’t have to. I found it was about 38 minutes to crispy bacon if you don’t pre-heat the oven and about 28 minutes if you do.
