Zero Time Meal – Pulled Pork and Frozen Veges

Zero Time Recipe: Pulled Pork and Frozen Vegetables

  • Put a pork shoulder or pork tenderloin (frozen or fresh) in the slow cooker. Pour a box of chicken broth overtop.
  • Set on high for for six hours.
  • Note: Tenderloin will be the most zero-time because you don’t have to spend time removing bones or fat at the end.
  • Good thing that didn’t take long! Someone is crying in the playroom!
  • When the slow cooker beeps, fill the kettle with water and start it heating. Hopefully it’s the automatic shut-off kind, because you know you’re going to forget about it and have to come back and boil it again.
  • Remove pork from the broth, discard fatty bits and bone (if applicable) and shred with forks. I sometimes use a knife in one hand to shred it a little more.
  • Mix in barbecue sauce to taste. I really like hickory flavoured ones. Now go help your kid skip the ad on youtube.
  • Now that the water has boiled, pour it over a bowl of frozen vegetables. Let it sit for a sec, then use a plate to cover it while you drain the water into the sink. Now, do it one more time (I suggest with oven mitts this time – It’s gonna be hotter). You now have hot vegetables ready to serve and you don’t have to clean a pot, or stand by the stove.
  • Serve pulled pork with nacho chips or as pulled pork sandwiches with extra barbecue sauce on top! Oh yeah. And the side of veges that they’re totally going to eat. I have found that if I toast the bread and cut off just the top crust, the sandwich maintains it’s shape, but the kids can eat around the crusts. Or, you know, you can eat it with your fingers, like this guy.
