
For When You Literally Have No Time
I am very aware that there is such a thing as a mini-pizza already, in the grocery store’s freezer section. I grew up on mini-pizzas. In fact, heating up a pepperoni pizza was the best way to bring my dog out of my parents room in the middle of the night, when I felt lonely. However, recipes allow gluten-free options and likely use better ingredients. I use tortillas for the crust, making the thinnest-crust pizza you’ll find. All the taste, fewer carbs.
My kids actually didn’t interrupt me during the making of these pizzas, so the instructions won’t be quite as funny as those in my other Zero-Time Meals.
Zero Time Recipe: Pizza (Both Normal and Extra Healthy)
Preheat oven to 350F. Put tortilla of choice onto a plate and spread with pizza sauce. I love using ceramic plates to cook them on because I can just throw them in the dishwasher afterwards. Some tortillas can stick a bit after cooking so I sometimes use parchment paper underneath.

This is my very favourite pizza sauce. I get it from No Frills,. It’s non-GMO, and it just tastes amazing. I never thought the kind of pizza sauce would make much difference, but this one does.

For an extra healthy pizza I buy these tortillas from Fine Fettle, our local natural food store. It has an amazing sundried tomato taste that really adds to the flavour.

For a truly zero time meal and extra health boost, use nutritional yeast instead of cheese. Or grate some cheese. Or better yet, buy pre-grated cheese. Once you have spread your “cheese,” sprinkle pizza spice or oregano on top.

If for some reason you have extra time, feel free to add toppings. I used pre-sliced pepperoni and pre chopped frozen veges. Then put the plates with pizzas straight into the oven as it continues to warm.

A few minutes after the oven is up to temperature, especially if you get distracted finally teaching your kids how to help unload the dishwasher, they’ll look like this. (Or slightly less cooked depending on how hungry you are). At which time you can take them out and transfer them onto cool plates for serving.

If desired, fold the sundried tomato tortilla in half to create a pizza pocket so that you kids can say, “What are you eating?”
